Honey-Banana Snack Cake

Makes 9 servings

  • 1 medium ripe banana
  • 1/2 cup honey
  • 3 Tablespoons vegetable oil
  • 1 large egg
  • 1-1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 4 teaspoons minced candied or preserved ginger
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • Sifted powdered sugar, optional

Preheat oven to 350°F. Spray an 8-inch square baking pan with cooking spray. Beat together mashed banana, honey and oil, in large bowl until blended. Beat in egg. Stir together flour, baking powder, soda, ginger, cinnamon, nutmeg and salt in medium bowl. Gradually add to honey mixture; beating until well blended. Pour batter into prepared pan. Bake for 25 to 30 minutes or until wooden toothpick inserted in center comes out clean. Cool pan on wire rack. Cut into squares to serve, plain or dusted with sifted powdered sugar.
